Family Meatballs

A solid, go to recipe that doesn’t require breadcrumbs, is gluten free, and packed full of herbs and flavors. I like to use ingredients that have multiple purposes. So instead of breadcrumbs, which often times have unnecessary additives in the ingredients (yes,  you can make your own, but I like to offer an option for those who don’t like an extra step in the cooking process), I use almond flour. Almond flour is a great gluten free binder for meatballs. And while you have the almond flour out, whip up these Lemon Poppy Seed Blueberry Muffins. 

For beginner eats, form into logs then slice into bite size pieces or long thin strips. Toddlers, slice round meatballs into 4 pieces if large- avoid serving a round meatball as it can become a choking hazard. Serve with pantry sauce over spaghetti squash or your favorite pasta for a complete, satisfying meal.

Ingredients
  

  • 1 lb grass fed beef
  • 1/2 cup or slightly less almond flour
  • 1-2 tsp Italian Seasoning
  • ½-1 tsp garlic powder
  • 1 handful fresh parsley rough chopped
  • 1 green onion finely chopped
  • 1 egg
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • Handful frozen or fresh chopped spinach optional

Instructions
 

  • Preheat oven to 400° Line a Sheet pan with parchment paper (unbleached is the best option).
  • Mix all ingredients in a bowl (using your hands works best). Roll meatballs into round balls. Line on baking sheet.
  • Bake for 15-20 mins depending on the size of meatballs.

Notes

**For beginner eaters, form into log shapes and cute into long strips or bite sized pieces. Large round balls may be a choking hazard, modify for toddlers.
