I love the flavor coconut milk adds but you could easily substitute with bone broth or water. Start this quinoa while you’re prepping dinner and Ta-Da perfectly cooked quinoa without turning on the stove. Now while I love Quinoa, sometimes I don’t want to be near the stove keeping an eye on quinoa. When I first got my Instant Pot over 5 years ago I learned how to cook 3 things first: Rice, Quinoa & steamed veggies. Quinoa is actually a seed, not a grain. It is complete protein and naturally gluten free. It contains all 9 essential amino acids (essentials means our bodies cannot make it so we rely on food/supplement sources). This makes it the perfect pair to a meatless meal. It can be eaten for breakfast, lunch, or dinner. Cooked quinoa freezes well too, so always make extra to save for a quick meal later.

Ingredients
- 2 cups Quinoa rinsed
- 2 cups liquid Broth, Water, Coconut Milk
Instructions
- Rinse and drain quinoa. Drizzle EVOO in bottom of instant pot. Mix together quinoa and liquid. Close lid, Manual High "1 min" Natural Pressure Release for 10-15 mins. Fluff with a fork and serve
