Carrot Citrus Slaw

Need a quick side or an addition to Taco Tuesday? This carrot Citrus Slaw is a flavor bomb with minimal ingredients. It’s great to switch up the flavor profile, add cilantro, or mint. As a time saver, use pre shredded carrots or shredded cabbage. For a tasty breakfast top your scrambled eggs, avocado toast, or my current obsession whipped cottage cheese toast. Yum!

Carrot Citrus Slaw

Ingredients
  

  • 5-6 carrots shredded
  • 1/2 cabbage shredded any kind, I like savory for this best
  • 1 orange zested and chopped
  • 2 limes zested and juiced
  • 1 tsp salt
  • Optional: cilantro chopped, hemp seeds, pumpkin seeds, grated ginger, green onions, fresh mint.

Instructions
 

  • Mix ingredients together in a bowl. Let sit for 30minutes before serving.
