Sweet Potato Lentil Stoup

Sweet Potato Lentil Stoup… Wait, STOUP?? What’s a stoup? A Stoup is a cross between soup and stew. This is a quick, mostly hands off meal that is so flavorful and satisfying. If you have fresh ginger and turmeric, I highly recommend using them. But powder will work too. This recipe is very adaptable- add any herbs or veggies that are in season or available.

Sweet Potato Lentil Stoup

Ingredients
  

  • 4-6 large sweet potatoes peeled and cut into large chunks
  • 1 cup red lentils rinse & drained
  • 3 carrots chopped into large chunks
  • 3 stalks Celery chopped or diced
  • 1 small onion diced
  • 4 cloves garlic minced
  • 4 cups broth vegetable, chicken or bone broth
  • 1 can chickpeas rinsed and drained substitute with your favorite cooked bean
  • Optional- Leafy greens add at the end, butternut squash cubed, cauliflower, broccoli, can of diced tomatoes (add at the end)

Seasonings

  • 1 tsp ground Coriander
  • 1 tsp smoked paprika
  • 1 tsp dried Oregano
  • 1 tsp ground Cumin
  • ¼-½ tsp garam marsala optional
  • 1 tsp ground turmeric optional
  • 3 inches fresh ginger minced or 1 heaping tsp ground ginger
  • 1 bay leaf

Add after cooking:

  • Salt and Black pepper to taste
  • 1 Lemon zested and juiced or lime
  • 1 can coconut milk

Instructions
 

Instant Pot Directions

  • Turn on instant pot to “Saute” function. Add Oil to coat the bottom of the pan (EVOO, coconut work well). Add onions, carrots, and celery. Stir and saute for 2 mins. Add garlic and seasonings. Stir. Add potatoes, lentils, and beans. Pour in broth and gently stir. Press “cancel” place lid on and lock, then press “Manual” high for 5 mins. When time is up “Quick Release” pressure. Stir and add lemon zest and juice, coconut milk, leafy greens, salt and pepper. Either gently stir to leave chunks of potatoes or give it a good stir to mash the potatoes to have a really thick soup. 

Stove Top Directions

  • In a large pot over medium heat, add Oil to coat the bottom of the pan (EVOO, coconut work well). Add onions, carrots, and celery. Stir and sauté for 2 mins. Add garlic and seasonings. Stir. Add potatoes, lentils, and beans. Pour in broth and gently stir. Bring to a boil, then simmer until potatoes are soft about 10-15mins (may take up to 20mins for larger chunks).
    Stir and add lemon zest and juice, coconut milk, leafy greens, salt and pepper. Either gently stir to leave chunks of potatoes or give it a good stir to mash the potatoes to have a really thick stoup.
