Turn on instant pot to “Saute” function. Add Oil to coat the bottom of the pan (EVOO, coconut work well). Add onions, carrots, and celery. Stir and saute for 2 mins. Add garlic and seasonings. Stir. Add potatoes, lentils, and beans. Pour in broth and gently stir. Press “cancel” place lid on and lock, then press “Manual” high for 5 mins. When time is up “Quick Release” pressure. Stir and add lemon zest and juice, coconut milk, leafy greens, salt and pepper. Either gently stir to leave chunks of potatoes or give it a good stir to mash the potatoes to have a really thick soup.
