Family Broccoli Bites
Ingredients
- 1 ½ cups chopped broccoli 1 head of broccoli or 12 oz bag frozen or pre chopped florets
- ½ cup almond flour
- ½ cup shredded parmesan or cheddar cheese
- 1 tablespoon flaxseed
- 1 egg
- 1 tsp oregano
- 1 handful fresh parsley finely chopped optional
- 1/2 tsp Sea Salt
- Optional seasonings: Few sprinkles of Garlic powder, Italian Seasoning
Instructions
- Preheat oven to 400°
- Steam broccoli and then rice using a food processor (pulse a few times until all chunks are "riced"). A potato masher will work too.
- In a medium sized mixing bowl, combine all ingredients. Line baking sheet with parchment paper, form logs using a well round tablespoon of mixture. Bake for 10 mins, flip, then bake for another 3-8 mins. Top and bottom should be golden. Store in a glass food container in the refrigerator for 3-5 days. Serve cold or reheat.
