No bake Oat Bites

Need a quick snack? This is perfect for a sweet treat, or just extra nutrients, especially ideal during pregnancy and postpartum. A few notes on ingredients… this is a case where ingredients matter. Choosing the best quality ingredients makes the difference [nutritionally]. Let’s start with the Honey, choose raw [Local if available] honey. Side note,  did you know honey NEVER expires! It may crystalize, but it’s still good. If it does happen to crystalize, just run it under some warm water. Nut/seed butter, choose a nut butter that uses only nuts and no other ingredients (salt is ok). Nut butter does not need palm oil, high fructose corn syrup. If you want, you can make your own nut butter by blending nuts or seeds in a food processor until a smooth consistency is formed. Moving onto Oats, it’s best to use organic oats. Oats are a top crop that have been found to contain glyphosate. I order our organic rolled oats in bulk from Azure Standard. Chocolate Chips, when buying chocolate look for fair trade- this will ensure that the farmers and workers are paid a fair price, rather than supporting a company that pays children pennies to harvest the cocoa beans. Dark chocolate provides a source of magnesium. I like to use these chocolate chips.  Chia seeds, conventional chia seeds are sprayed with pesticides and fungicides that soak into the seeds and cannot be washed off. Best to look for organic chia seeds which can be found in local grocery stores, health food stores, or sold online. A local [to me] company that I love, sells the best coffee & chia seeds.

Ingredients
  

  • 2 cups Organic Rolled Oats
  • 1 cup Nut/Seed Butter Peanut butter, almond butter, sunflower seed butter, mixed nut butter
  • 1/3 cup Raw Honey
  • 1/2 cup Ground Flax seeds
  • 2 TBSP Chia seeds
  • 1 tsp Sea Salt
  • 1 tsp Pure Vanilla Extract
  • 2 TBSP melted coconut oil
  • 1/2 cup Dark Chocolate Chips

Instructions
 

  • Pour ingredients except for the chocolate chips in a large mixing bowl. Mix together to coat the oats completely.
  • Add chocolate chips and fold to evenly mix.
  • Place mixture in refrigerator for 10-20mins.
  • Using a small scoop (small cookie dough scooper) or rounded tablespoon, scoop and form into a ball using hands. Place in a container.
  • Refrigerate- best if consumed within a week or freeze for up to 3 months.
