Coconut Power Muffins

These muffins are a family favorite. A few notes to add, if you are thinking they will be a sweet fluffy blueberry muffin, this is NOT that type of muffin. These are dense, but packed full of protein, fat, and fiber. They are ideal for athletes, busy parents, teens or anyone! They will keep you full and focused in the morning. Adapt this recipe to your taste.

Coconut Power Muffins

Ingredients
  

  • 6 eggs
  • 1/4 cup butter or ghee melted
  • 3/4 cup canned cococnut milk
  • ▪ 1 tablespoon honey or maple syrup can add more up to 3 tbs for sweeter muffins
  • ▪1 tsp vanilla extract
  • ▪ 3/4 cup sifted coconut flour measure after sifting
  • ▪1/2 tsp baking powder
  • ▪ 1/2 tsp salt
  • ▪ 1 tsp cinnamon
  • ▪ zest of 1 lemon
  • ▪ juice of 1/2 lemon
  • ▪ 1 1/2 cups fresh blueberries optional
  • Or
  • Handful of dried craisins opional

Instructions
 

  • Preheat oven to 400°. Line muffin tin with liner or use a silicone muffin pan (I like to use a brush and gently coat each cup with melted butter/ghee).
  • In a mixing bowl combine all dry ingredients. In another mixing bowl whisk eggs, add butter, milk, vanilla, lemon juice, zest, and honey/maple syrup. Combine wet ingredients in with dry ingredients. Mix until no lumps, gently stir in blueberries or craisins.
  • Bake for 15-20mins until the top is brown.
  • Makes 12 muffins
