▪ 1 tablespoon honey or maple syrupcan add more up to 3 tbs for sweeter muffins
▪1 tsp vanilla extract
▪ 3/4 cup sifted coconut flourmeasure after sifting
▪1/2 tsp baking powder
▪ 1/2 tsp salt
▪ 1 tsp cinnamon
▪ zest of 1 lemon
▪ juice of 1/2 lemon
▪ 1 1/2 cups fresh blueberriesoptional

Instructions
Preheat oven to 400°. Line muffin tin with liner or use a silicone muffin pan (I like to use a brush and gently coat each cup with melted butter/ghee).
In a mixing bowl combine all dry ingredients. In another mixing bowl whisk eggs, add butter, milk, vanilla, lemon juice, zest, and honey/maple syrup. Combine wet ingredients in with dry ingredients. Mix until no lumps, gently stir in blueberries or craisins.
