This seems silly to write a recipe for, but I have referred back to my own reel many of times because this is THAT good. I love making a batch of marinated artichokes and adding them to salads, bowls, charcuterie boards. The longer they sit aka marinate, the better!
Marinated Artichoes
Equipment
- 1 Pint sized Mason Jar or Glass bowl
Ingredients
- 1 can Artichoke hearts drained and rough chopped Can sub for hearts of palm
- 1 Lemon juiced Sub for 2 limes
- 1 tsp Italian Seasoning
- 2-4 cloves Garlic smashed or minced
- 1/2 tsp Salt
- 1/3-1/2 cup Extra Virgin Olive Oil
- Few shakes of Crushed red pepper Optional
- Feta Optional
- Sundried tomatoes Optional
Instructions
- Add all ingredients (Artichokes, Lemon Juice, Italian Seasoning, Salt, garlic, additional add ins) in a mason jar except for the Olive Oil.
- Pour Olive oil until the top of artichokes are lightly covered
- Give the jar a good shake and let sit for at least an hour before using. The longer this sits the better. Enjoy!
