This weeknight meal comes together fast, is delicious, and packed full of veggies. This can be made under 30mins and is family friendly. For a time saver tip- use a food processor to shred the cabbage or carrots. OR buy pre shredded cabbage and carrots aka slaw mix. You can always switch up the meat, try ground turkey. And don’t be afraid to add extra veggies.
I always double the Quick peanut sauce. It’s SO tasty! Making your own sauces and dressings will not only save you money, but you can choose better ingredients/ Have you ever looked at some of the ingredients in store bought sauces/dressings? Spoiler alert! They last forever on the shelf because of the preservatives. Leave them at the store and whip up your own at home. Spend that money elsewhere 🙂
Egg roll in a bowl
Ingredients
- 1 lb ground pork or ground beef
- 1 TBSP Coconut oil + 1 tsp
- 1 head cabbage shredded*
- 3 large carrots shredded*
- 1 onion thinly sliced
- 1 inch ginger minced
- 3 cloves garlic minced
- 1 scallion sliced
- Handful mushrooms chopped
- Salt and pepper to taste
- Thai peanut sauce see attached recipe
- Optional: 1 tsp sesame oil 1 tsp Chinese szechuan spice, jalapenos, crushed red pepper flakes, zucchini, peppers
Instructions
- In a wok or large pan, saute pork with salt and pepper. Add mushrooms and sauté. Once moisture has released, add in onion, garlic, ginger and rest of coconut oil. Saute until onions are translucent, add carrots and cabbage and any other veggies. Saute for about 5 mins, stirring frequently to cook cabbage down.
- Optional- add thai peanut sauce or add only ½ and save ½ to drizzle over top. Top with Sesame seeds or hemp hearts.
- Serve over coconut rice, over a bed of greens, or in lettuce wraps.

Quick Peanut Sauce
Ingredients
- ½ cup coconut aminos
- 3 tbsp creamy peanut butter unsalted, just ground peanuts
- 1 lime zested and juiced
- 1 tbsp pure maple syrup or honey optional
- 2-3 inches of fresh ginger minced
Instructions
- Place ingredients in a mason jar and mix together with an immersion blender
